  6. Strain 5, and done! If you want to store it in fridge or freezer, please make sure to lower the heat to room temperature.

Dashi (出汁, だし) is a family of stocks used in Japanese cuisine. Dashi is also mixed into flour base of some grilled foods like okonomiyaki and takoyaki. This building block of Japanese cuisine is a seaweed based broth flavored with dried mushrooms and bonito (dried fish flakes).
