Steps to make Roh di kheer:
  1. Wash and soak the rice for 15 minutes and strain the sugarcane juice.
  2. Put it on the gas stove and allow it to boil. While it starts boiling add the milk in it.
  3. Remove all the impurities over it.
  4. Then add the soaked rice in it.
  5. Mix the salt in it(this step is totally optional as Punjabi people do not add salt in this kheer, but I prefer it because it retains the sweetness of kheer).
  6. Cover the lid and stir it occasionally otherwise it may burn at the bottom in low flame.
  7. After 45 minutes add the roasted peanuts in it.
  8. Then add the roasted cashew nuts in it.
  9. Add the roasted almonds in it.
  10. Mix it well and now add cardamom powder in it.
  11. Mix it well and cook it for again 2 minutes and then switch off the flame. Now your Roh di kheer is ready.
  12. Serve hot or cold by garnishing some rose petals, roasted dry fruits.
