- Prepare 2 tbsp Cashew nuts chopped

- Prepare 1 inch Cinnamon stick
It will give it a nice and creamy texture, that skim milk or low-fat milk won't give. Khoya - I like to add Khoya in my Halwa, but it is completely optional. You can make the Halwa only with Milk too. Beetroot Halwa is a delicious fudge-like pudding that is made from grated beetroot stewed in milk and spiced with cardamom.
Steps to make Beetroot Halwa:
- In a karai, add ghee and let it melt completely. Add the cashew nuts, almonds, raisins finely chopped and roast till fragrant and light golden in colour. Once done remove it from karai. Keep aside for later use.
- In a non stick pan heat ghee and let it melt. Temper with cinnamon stick, bay leaves and let them fragrant. Add the beetroot paste and fry it on medium flame for 5 mins. Keep stirring continuously or else the beetroot may burn.
- Add the milk and let it come to a boil. Cover and simmer on low heat until the beetroot is completely cooked and become soft. Do not increase the flame or else the milk will evaporate quickly and the beetroot will stick to the bottom of the pan. The beetroot will get cooked in the milk.
- Open the lid. Add condensed milk, khoya kheer, sugar and keep stirring vigorously until the khoya kheer and sugar melts completely. Stir and cook for 5-6 mins
- Add green cardamom powder, roasted dry fruits. Give it a mix. Let it come to room temperature. Refrigerate it for at least 30 mins. Serve it in any celebration or festival or as a prasad.
