I substituted palm jaggery with the regular cane jaggery that the recipe asked for and I think it made all the difference. Wash the bittergourds well, snip the ends and cut them vertically. Bitter gourd is available in almost all Indian stores, if not fresh you could find frozen ones. Remove the seeds to make it less bitter.
Steps to make Jaggery bittergourd:
- First cut karela into round slices.add salt keep aside.After 1/2 hour wash them.
- Heat a cooker.add oil,jeera,onion keep stir.Add tomato stir. Add all spices, karela slices, add jaggery.Add some water.whistle it.
- Now open lid.cook it open.add lemon juice.now tangy spicy bittergourd are ready.
Bitter gourd/pavakka is one of our KARELA BITTERGOURD WITH TAMARIND and JAGGERY. This is a no-jaggery bitter gourd recipe. Hagalakayi masale palya or Bitter gourd fry is a very tasty recipe and goes very well with either plain rice or curd rice. Add bitter gourd pieces and fry. :- The more u fry, the more you can gete rid of the bitterness. Add the ground paste, tamarind juice, jaggery and salt.
