  2. Prepare 1 big plantain

  10. Prepare Green peas

I would cook and feed everyone while my poor mother looked on. Palm oil is an edible vegetable oil derived from the mesocarp (reddish pulp) of the fruit of the oil palms, primarily the African oil palm Elaeis guineensis. The Nigerian native Jollof Rice is also known as Iwuk Edesi or Palm oil Rice is a soul food at it's finest - It's hearty, incredibly satisfying and deeply comforting. It is quite different from the popular Nigerian Jollof Rice because this recipe uses Palm Oil and other indigenous Nigerian spices.

Instructions to make Palm oil Fried Rice:
  1. Parboil rice to almost eatable stage but not too soft; rinse under running water and set aside
  2. Wash garlic, onions and ginger. Grate ginger, dice garlic and cut onion in strips. Set aside. Rinse green peas; set aside.
  3. Remove plantain back; divided into four and dice in cubes.
  4. In a frying pan, pour groundnut oil enough for frying the plantain. Fry plantain till golden brown. Set aside.
  5. Drain oil out.
  6. Pour in palm oil. Allow to heat up; lower the heat. Pour in onion and allow for 15 seconds.
  7. Pour in ginger and garlic. Pour in pepper to your taste.
  8. Add maggi to taste.
  9. Gently pour in the rice. Taste for salt before adding salt.
  10. Use foil paper to cover the rice. And leave to cook.
  11. Remove foil and pour in the green peas. Pour in plantain and mix.
