- Take 1 1/2 quart watermelon juice
- Make ready 1/2 cup sugar

- Purée and strain watermelon to make 1 1/2 quarts juice,chill
- Make simple syrup by boiling sugar in water for 1 minute then simmer for 5 minutes, remove from heat add in lemon juice and allow it to cool.
- After syrup has cooled to room temp combine with chilled watermelon juice.
- Pour into ice cream maker and freeze according to manufacturer's instructions.
- You can also make this in the freezer if you don't have an ice cream maker. Just pour the mixture into a glass or metal pan (make sure not to over fill as it will expand as it freezes!) every couple of hours scrape it from the top down, (we use a fork) it'll have the texture of a snow cone. Do this a couple of times. After the second time put it in a freezer safe container with a lid. Should keep in the freezer for a few months.
