- The small Boondi will drop into hot oil. Wait for it to fry well and crispy. Remove and drain excess oil on a tissue. Use a strainer with smaller holes if desired for motichoor laddu.
- Meanwhile in another bowl dissolve the palm sugar in water until it bubbles up slightly. Wait for 1 or 2 strings consistency.
- Add lime juice to prevent sugar from crystallising in the laddoos. This will keep it moist always.
- Once sugar syrup is ready add it to the Boondi prepared. Mix well and let it soak up the syrup for 10-15 mins.
- Now add cardamom powder and the chopped dry fruits. Mix well.
- Grease palms with ghee and roll the Boondi mixture into medium sized balls. Set aside.
- Garnish with kesar strands (optional) and more chopped nuts and dry fruits.
- These laddoos can be stored for 2-3 days in an airtight container. Best to refrigerate them as it has ghee.
