Njanga Rice or Crayfish Rice or Palm Oil Jollof Rice or Palm Oil Rice or Native Jollof Rice is rice cooked with crayfish, palm oil.
Instructions to make Palm oil jollof rice:
- Parboil rice and set aside
- Wash and boil the smoked fish with seasoning, salt, pepper and onion
- Heat up red oil in a pot.
- Add the onion and fry a bit
- Add blended tomatoes and pepper, fry for some minutes
- Add salt, Curry, thyme, garlic, ginger, seasoning, crayfish and fry
- Pour in the fish stock, add more water and allow boil for minutes
- Pour in the rice, taste for salt and seasoning
- Boil till rice softens and water dries up
- Serve and enjoy your food
It is smoky, spicy, so good! When I first wrote this recipe on the blog, it was totally unplanned. I woke up one day and made a quick early morning craving. The only rice dish that Nigerians use palm oil in when making it is The Native Concoction Rice, a dish similar to jollof but which contains vegetables, a variety of meat and seafood and Palm oil, hence the name concoction rice. I understand that recipes can be modified but it just doesn't seem right to write.
